“Why do Christians need to insist on one God?  Why can’t there be many gods?”

There’s nothing wrong with the idea of multiple gods as a concept.  It’s just that this is not the reality of the situation. If we happened to live in a universe created by many gods, that would be fine. But we don’t. Instead, we exist in a universe brought about by one God.  This is the teaching of the Bible. As for reasons to accept the Bible as the word of God, that is a separate discussion.
